Vegetable couscous

I love vegetable couscous and it’s so simple to make! Full of vitamins and the couscous gives it a good portion of protein too. Whats even better is that by making the vegetables really small you can hide some veggies in there and the kids wont even notice!

Ingredients

250g couscous

1 vegetable stock cube

1tsp of turmeric

Olive olive (or any oil you want to use)

1 leek

1/2 large onion

1 courgette

1 red pepper

1/2 cauliflower (including leaves)

50g mixed nuts

Tbsp dill

Method

Tip the couscous into a bowl. In a jug mix 300ml boiling water with the stock cube and turmeric, mix and add to the couscous, cover and leave to the side.

Half the leek through the middle then slice finely. Chop the red pepper, courgette, onion, cauliflower and leaves as fine or chunky as you like. I like ti use my hand processor to chop them fine (although I wouldn’t do the leeks in this, from experience it doesn’t chop them well).

Add olive oil to the pan and turn up the heat, add the vegetables and cook for 8-10mins until soft. Add the nuts, dill and season. Stir and cook for another 2 minutes.

Turn the heat off and mix in the couscous. Taste to check seasoning and your done! This should do atleast 4 portions.
